Ingredients
- 1 lb chicken breast, sliced
- 8 oz rice noodles
- 2 eggs
- 2 tbsp oil
- 3 tbsp fish sauce
- 2 tbsp tamarind paste
- 2 tbsp brown sugar
- 1 tbsp soy sauce
- 1 cup bean sprouts
- ¼ cup roasted peanuts
- Lime wedges
Instructions
- Soak noodles until pliable.
- Mix sauce ingredients.
- Cook chicken; remove.
- Scramble eggs.
- Add noodles, sauce, chicken, and vegetables. Toss and serve.
