Ingredients
- 3 cups cooked shredded chicken
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 1 cup chicken broth
- 1 can diced tomatoes with green chilies
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cups shredded cheddar or Colby Jack cheese
- 10 corn tortillas, cut into pieces
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- Sauté onion and pepper until soft.
- Stir in soups, broth, tomatoes, and seasonings.
- Fold in chicken.
- Layer tortillas, chicken mixture, and cheese.
- Bake until bubbly and golden.
