Ingredients
- 2 lb beef or chicken bones
- 1 onion, halved
- 3-inch ginger, sliced
- 2 star anise
- 1 cinnamon stick
- 3 cloves
- 1 tbsp coriander seeds
- 10 cups water
- Fish sauce to taste
- Rice noodles
- Protein of choice
Instructions
- Char onion and ginger.
- Toast spices.
- Simmer broth with bones and aromatics.
- Strain and season broth.
- Assemble bowls and serve.
