Ingredients

  • 2 lb beef or chicken bones
  • 1 onion, halved
  • 3-inch ginger, sliced
  • 2 star anise
  • 1 cinnamon stick
  • 3 cloves
  • 1 tbsp coriander seeds
  • 10 cups water
  • Fish sauce to taste
  • Rice noodles
  • Protein of choice

Instructions

  1. Char onion and ginger.
  2. Toast spices.
  3. Simmer broth with bones and aromatics.
  4. Strain and season broth.
  5. Assemble bowls and serve.
